Good Dee's Blackberry Lime Coconut Cake

All this warmer weather has us craving fruity desserts. After wandering the grocery store in search of the perfect flavor combination, we saw a beautiful batch of fresh blackberries. We had to make a recipe up on the spot. This cake is incredible.

Good Dee’s Blackberry Lime Coconut Cake

What you’ll need for the cake:

2 Good Dee’s Coconut Snack Cake Mixes

3 lime wedges (juiced) or 3 packets of True Lime powder

½ cup of fresh blackberries

9-inch cake pan

What you’ll need for the frosting:

16 oz of room temperature cream cheese 19 oz if you plan to decorate with detail

4 tablespoons confectioners’ sugar replacement

1 tablespoon vanilla extract

1 lime wedge (juiced) or 1 packet of True Lime powder

2 tablespoons of heavy cream

½ cup strained blackberry juice

 Directions:

  1. Preheat your oven to 325°
  2. Mix the contents of your 2 bags of mix and follow the directions doubling the ingredients of 1 bag.
  3. Add your lime flavoring and fold in your fresh blackberries.
  4. Combine until smooth. You will have some chunks; you can also mash them ahead of time.
  5. Line the base of your cake pan or spray with nonstick spray.
  6. Pour in your mixture and bake for 40-50 minutes or until toothpick comes out clean.
  7. Allow to cool completely before cutting.

Frosting Directions:

  1. Mix your ingredients for your frosting using a electric mixer or hand mixer.
  2. Combine on high speed until smooth.
  3. Add in 1-2 tablespoons of heavy cream as needed to thin your frosting.
  4. Frosting your cake once cooled and enjoy.

You can get as creative as you wish for this recipe. The flavor is amazing.

*We did a simple frosted cake with some additional roses on top.
