Good Dee's Coffee Cake + Cinnamon Butter Glaze

The two things I love most about life are coffee and cake. I find myself extra appreciative of the two combined.

Coffee cake is something that I always forget I love until I have a delicious piece warmed with my coffee. The cinnamon coffee cake from my local coffee shop is amazing but full of unnecessary carbs and sugar. So, I solved that dilemma for us both. I took my muffin mix and gave it a simple makeover. Baked cinnamon butter strands in the cake and topped it with an incredible cinnamon butter glaze. 

You'll want to make this every single morning. 

Here's what you'll need:

Good Dee’s Cinnamon Coffee Cake w/ Brown Butter Glaze

Prepare Good Dee's Muffin mix as directed adding 2 teaspoons of brown sugar replacement or sweetener or choice. Do not bake.

Brown Butter Glaze

Ingredients:

5 tablespoons of butter (melted)

2-4 teaspoons of ground cinnamon

2 teaspoons of granular brown sugar replacement or equivalent

Brown Butter Glaze

Directions:

  1. On stovetop or microwave. Heat your butter until melted.
  2. Add in your sweetener and cinnamon.
  3. Keep adding cinnamon until dark in color and set aside to cool.

 Coffee Cake Directions:

  1. Preheat oven to 350°
  2. Follow directions for muffin mix adding 2 teaspoons of brown sugar replacement.
  3. Line cake pan with parchment paper and add your muffin mixture.
  4. Using a spoon, drizzle your butter glaze a teaspoon at a time until you have used half.
  5. Using a knife or confectionary tool, drag through your glaze and batter to form strokes.
  6. Bake for 12-15 minutes or until edges are golden.
  7. Remove from oven and allow to cool completely.
  8. Cut into squares and top each piece with remaining glaze or cover completely.

 *Tip your glaze should be the consistency of pudding or yogurt.

* If your glaze has butter clumps, keep mixing or whisk until smooth. Make more as needed.
