Good Dee's Blackberry Lime Coconut Cake

All this warmer weather has us craving fruity desserts. After wandering the grocery store in search of the perfect flavor combination, we saw a beautiful batch of fresh blackberries. We had to make a recipe up on the spot. This cake is incredible.

Good Dee’s Blackberry Lime Coconut Cake

What you’ll need for the cake:

2 Good Dee’s Coconut Snack Cake Mixes

3 lime wedges (juiced) or 3 packets of True Lime powder

½ cup of fresh blackberries

9-inch cake pan

What you’ll need for the frosting:

16 oz of room temperature cream cheese 19 oz if you plan to decorate with detail

4 tablespoons confectioners’ sugar replacement

1 tablespoon vanilla extract

1 lime wedge (juiced) or 1 packet of True Lime powder

2 tablespoons of heavy cream

½ cup strained blackberry juice

Directions:

Preheat your oven to 325°
Mix the contents of your 2 bags of mix and follow the directions doubling the ingredients of 1 bag.
Add your lime flavoring and fold in your fresh blackberries.
Combine until smooth. You will have some chunks; you can also mash them ahead of time.
Line the base of your cake pan or spray with nonstick spray.
Pour in your mixture and bake for 40-50 minutes or until toothpick comes out clean.
Allow to cool completely before cutting.
