We took a simple muffin mix south of the border for a little spice. If you love the idea of jalapeño cornbread, then this batch of Good Dee's muffins will have you the life of the party. This recipe is simple, easy and full of flavor.
Good Dee's Chorizo, Jalapeño, and Mozzarella Muffins
with Bacon’s Heir Streusel
Servings: 12
Calories per Serving: 252
Preparation:
Tools: one medium mixing bowl, one small bowls, 12 muffin liners, and a muffin tin
Ingredients for the muffins:
3 eggs
76g butter or coconut oil, melted
1 package Good Dee’s muffin mix
112g/4oz smoked chorizo, diced small
56g/2oz jalapeños, diced small
126g/4.5oz finely shredded mozzarella
Ingredients for the streusel:
42g/1.5oz finely shredded mozzarella
42g/1.5oz Bacon’s Heir Pork Panko
14g butter or coconut oil, melted
1tsp cumin, if desired
1tsp chili powder, if desired
Instructions:
1. Preheat oven to 375f/190c
2. Line muffin tin with liners
3. Prepare the muffin mix in the medium bowl according to the directions, excluding
vanilla extract and sweetener
4. Add in the diced chorizo, jalapeños, and muffin portion of the mozzarella cheese
5. Prepare the streusel by adding all streusel ingredients to the small bowl; mix very well to combine - should look sandy in texture
6. Fill each muffin liner, until all batter is used
7. Spoon streusel topping onto each muffin until all is used, pressing it down onto the batter slightly so it sticks
8. Bake for 25-30 minutes (rotating pan halfway through) or until any visible part of the muffin looks almost dry and a toothpick inserted into the center of a muffin comes out clean
9. Allow the muffins to cool completely before eating
