Good Dee's Mozzarella Sticks

What I miss most, is a basket of mozzarella sticks and a dipping bowl of marinara. I was never much of a fish stick girl but mozzarella sticks and I...friends.

Our contributing baker did the unthinkable and made an amazingly easy, kid friendly recipe. You can have your cheese sticks and dunk them too!

Good Dee's Mozzarella Sticks

Servings: 4

Calories per Serving: 146

Preparation:

Tools: two bowls with diameter that will fit a mozzarella stick cut in half, a pan that

will fit in the freezer, frying pan

Mozzarella sticks need at least two hours in the freezer so plan to make ahead

Ingredients:

1 egg

4 mozzarella sticks

30g Good Dee’s corn(free)bread mix

16g grated parmesan cheese

1.5 tsp italian seasoning blend

0.5 to 1 tsp salt

High-heat oil for frying (ghee, avocado oil, coconut oil)

Instructions:

1. Line a baking sheet with parchment paper

2. Crack egg into one bowl and whisk lightly

3. Measure mix, parmesan cheese, seasoning blend, and salt into the other bowl and mix well

4. Cut each mozzarella stick in half

5. Single-coating method: roll each mozzarella stick in the egg, and then the dry mixture

 6. Place each coated mozzarella stick on the prepared baking sheet and place the sheet in the freezer for at least two hours

7. After two hours, add enough oil to coat the bottom of a frying pan and set burner to just below medium heat

8. While the oil heats, set out a plate with a paper towel on it

9. Once oil is hot, add the sticks 2-4 at a time, depending on the size of the pan - adding too many at once will decrease the temperature of the oil and will result in a longer cooking time and more soggy mozzarella stick

10. Gently roll each mozzarella stick until browned to preference on all sides, which should take a total of roughly five minutes

11. As the mozzarella sticks finish cooking, place on the plate lined with a paper towel

12. Enjoy immediately plain or with a dip of choice!

If the plan is for these to be made ahead of time or if there are leftovers, they can be refrigerated for up to a week or frozen. Again, the double-coating method holds up far better to cooling and reheating. Let them cool, and place on a pan that will fit in the freezer. Freeze for one hour (this keeps them from sticking together), and then package them in freezer bags. They can be frozen for several months.

To reheat, preheat oven to 375f. Place mozzarella sticks on a baking sheet lined with parchment and bake for 5-7 minutes.
