The bacon fat gives this quick bread an extra special breakfast feel and compliments the maple flavor really well. I used my favorite beef-bacon fat and it was delicious. If you don’t have bacon fat you can use salted butter.
You can split this quickbread and use it to make a breakfast sandwich with egg and cheese. You can slice it, toast it in a hot pan and top it with butter and syrup. It will make any breakfast feel special and taste delicious.
Prep time: 5 minutes
Cook time: 1 minute
Yield: 1 serving
Ingredients:
1 tablespoon bacon fat or salted butter
The white of 1 large egg
1/4 teaspoon maple extract
1/4 cup Good Dee’s pancake mix
1 tablespoon chopped pecans
Directions:
Place the bacon fat or butter in a 12-ounce mug and microwave until melted, about 45 seconds.
Mix the egg white and maple extract into the fat
Add the pancake mix and stir well, making sure everything is completely mixed on the bottom of the mug.
Mix in the chopped pecans.
Microwave on full power for one minute until bread is risen, feels slightly firm to the touch and has started to pull away from the sides of the mug.
Turn the bread out of the mug to serve
