Soluble Corn Fiber (SCF) is also known as resistant digestive maltodextrin. The key word is resistant. SCF is FDA approved as a dietary fiber, made with maltose. The FDA approved it because it is recognized as a true fiber and doesn’t affect glucose such as maltodextrin. SCF is made from corn starch into a prebiotic fiber with low net carbs.
Soluble Tapioca fiber (STF) is also known as resistant dextrin. Key word is resistant. STF is made from cassava. STF has the same caloric nutritional profile and net carbs as corn fiber but alleviates any sensitivities to corn.
Allulose is not a sugar alcohol, it is classified as a sugar but doesn’t get digested or processed in the body. Allulose has no negative impact on glucose or insulin. As of April 2019 the FDA has imposed new labeling guidelines. Allulose is to be excluded from the total and added sugars declaration in a products nutrition fact. It will still count toward the caloric value.
A natural sweetener extracted from the plant known as Stevia. Stevia contains little to no calories or carbs and has minimal impact on your glucose levels.
Sugar alcohol that doesn’t contain alcohol. 70% of the sweetness of actual sugar. It registers 0 on the glycemic index. Erythritol is not to be confused with maltitol. The highest quality erythritol would be Non-GMO Erythritol which is what we use in our mixes.
Almonds from California! Our blanched almond flour is made using the finest mesh and the almonds are blanched on the farm. If you see little black specs in our almond flour mixes, just know that these pieces are from the hull in the blanching process. Totally edible!
This is our original flour! We use sunflower seeds which are then made into a flour. Sunflower seeds keep the flour low in net carbs and provides a great texture unmatched by others.
