Fall is near and we are looking for all the inspiration. I took our Low Carb, Sugar Free Good Dee's Butter Pecan Cookie Mix and added 2 tbs of sweet potato butter. I was visiting some family in the south and saw this jar of no sugar added sweet potato butter. What is more Fall than sweet potatoes and butter?? Nothing...except maybe plaid.
The total grams of sugar for 1 Tbs of sweet potato butter is 5g of natural sugar from the sweet potato. That is less than 1 gram of sugar per cookie! It also gave me an idea that I needed to share. Take our butter pecan cookie mix and add 1-2 tbs of any filling you desire. Apple butter, pecan butter, cinnamon butter, and anything else you love this time of year. I kept the same added ingredients as the back of the bag requires and baked for the same bake time. Dee-licious! All the sugar eaters in the house loved this treat.
Here's What You'll Need:
1 Good Dee's Butter Pecan Cookie Mix
Ingredients as directed (1 egg, vanilla and butter)
2 tbs Sweet Potato Butter
1/2 tsp of cinnamon
1. Preheat your oven to 350 degrees
2. Mix your wet and dry ingredients together
3. Line a baking sheet with parchment paper
4. Scoop 1-1.5 tbs of dough on to your baking sheet 2 inches apart
5. Repeat until all the dough is used
6. Bake for 10-15 minutes
7. Allow to cool & enjoy
