Good Dee's Easy Arepas

Good Dee's Easy Arepas

Preparation:
Tools: medium bowl, a spoon, a cookie dough scoop (hands work too!), a nonstick
pan to fry, a spatula, and a plate with a paper towel on it to cool
Ingredients:
3oz baby corn, chopped
1oz chopped jalapeños
1oz shredded cheese
1 package Good Dee’s corn(free)bread mix
small cup of water
avocado oil for frying (ideal for higher smoke point but butter can also be used)
Instructions:
1. Prepare a plate with paper towels for the cooked arepas to cool
2. Heat avocado oil in frying pan over low-medium heat
3. In a medium bowl, combine mix, chopped baby corn and jalapeños, and cheese
4. Stir until ingredients are well incorporated
5. Slowly add water until the batter can hold together when squeezed in your hand
6. Scoop balls of dough or form with hands to the desired size, then flatten them into
patties; I used a cookie dough scoop for uniformity but the dough balls can be
weighed too
7. Place 2-3 patties into the preheated pan, making sure not to crowd them
8. When the bottom is lightly browned, flip carefully
9. Once both sides are golden brown, carefully place them on the plate to cool
10. Repeat until all batter is used, and serve warm


These arepas can be stored in the refrigerator and warmed up in a pan or oven. They can also be frozen. Thaw overnight in the refrigerator and reheat as needed. I’m sure they’d even be good cold!
