Good Dee's Chocolate Silk Pie

Have you been dreaming of pie since Thanksgiving? Don't worry, we've got you covered. We took our Good Dee's Sugar Free Cookie mix and made the perfect golden crust. We topped it with our homemade chocolate silk filling and a layer of whip cream.This pie is so light and delicious, it will be hard not to eat the whole thing. Here's what you'll need:

Good Dee’s Chocolate Silk Pie

Sugar Free Cookie Crust

Pie Crust Ingredients:

1 Good Dee’s Sugar Free Cookie Mix

1 egg

1 teaspoon of melted butter

1 teaspoon of vanilla extract

1 rolling pin or bottle

1 pie pan

Chocolate Silk Filling Ingredients:

1 stick of room temperature butter

½ cup of granular Swerve

4 ounces of room temperature cream cheese

2 tablespoons of heavy cream (more if needed)

½ a bar of melted Baker’s Unsweetened Chocolate

1 teaspoon of vanilla extract

Pie Crust Directions:

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, add in your pie crust ingredients and knead until fully incorporated. Roll into a ball.
  3. Place your dough ball between two sheets of parchment paper and roll out to inch thickness. Your crust should be thin but not break apart.
  4. Remove your top layer of parchment paper and place your pie pan face down, flip your crust into your pan and press firmly. Using a fork, poke holes into your crust to allow air to escape. 
  5. Bake your crust for 10-15 minutes or until golden brown. Remove from oven and gently press your crust back into the pan. This will ensure there are no air pockets underneath. Set aside to cool.

 

Chocolate Silk Filling Directions:

  1. In a mixing bowl, add in your butter, swerve, cream cheese, and vanilla and mix with an electric mixer.
  2. If you mix is too thick, add in your 2 tablespoons of heavy cream to thin slightly.
  3. Using a double broiler or microwave, melt your ½ bar of unsweetened Baker’s chocolate.
  4. Slowly add in your melted chocolate while mixing your filling. This should make a pale chocolate filling. If a rich chocolate filling is desired, add more melted chocolate.
  5. Adjust your filling to your taste and pour into your cooled pie crust. Top with whipped cream and shaved chocolate and refrigerate for 25-30 minutes before serving.
